A crispy crust combined with a moist, gooey centre is the recipe for a perfect brownie. Line an 18 x 28cm sponge roll tin with baking paper. The dairy free version can be a little fragile in warm weather.

It can be simply made in a food processor and because it is gluten free, you don’t have to worry about overworking the batter and making a tough finished product.
